Not strictly "best of"'s, but oh well:

Very Best of Badfinger [Capitol] -- Absolutely the best comp I've ever heard.

4760 Seconds:Shortcut to TFC -- Went beyond my expectations. Also, includes three of the best new songs ever included on a comp.

Epoch Collection: Rupert Holmes -- Man is a genius and this gives a great overview -- but anyone who hasn't heard "Widescreen" is missing out on a forgotten classic.

Atlantic Collection: Hall & Oates -- Love their '80s hits, but this really pulls together the absolute must hear stuff from their '70s albums. If you have any warm feelings toward "She's Gone" you have to buy this today.

Best of Faces: Good Boys When They're Asleep -- Not as complete a picture as the box set, but probably the best place to start.

Strange Magic -- THE place to start listening to the ever expansive ELO.
God save strawberry jam and all the different varieties.

"The Beast of Alice Cooper" is great as is
"Recurring Dream - the best of Crowded House"
not to mention the Beatles "Blue" and "Red" albums
and also "Belavista Terrace - The best of the Go-Betweens"
with "Wave of Mutilation" - Best of The Pixies - not far behind
and many more...love good compilations me...

Bollocks! I forgot about the Best of Blondie(if it's the one with the blue cover and about 12-14 tracks on it) and Red and Blue by the Fabs. Also
Introspective by Pet Shop Boys is a corker. And Neil Young Decade. I must think these things through more before starting a topic.
